Ong Choy Tops

What you need

Tops of half a bunch of ong choy
3 dried red chiles
3 cloves garlic
peanut oil
fish sauce (~1 tspn)
salt (~1/2 tspn)
1/4 lime

How to do it

Chop garlic into medium/small pieces. Chop Ong Choy into maybe 1/2 inch pieces.

Heat peanut oil on high heat until hot. Break up red chilis into 3 piece each and put in oil. Fry until one or two pieces are close to black on one side. Turn heat to medium or medium high. Add garlic, cook for maybe 30 seconds until it smells good. Add ong choy. Stir until garlic and peppers are on top of leaves. Cook, stirring frequently, until leaves are wilted. Add fish sauce and salt and stir some more. Remove from heat. Squeeze lime over it. When you eat it, make sure you eat the pepper pieces, as they are great.
